
Serving suggestion: Zesty Celeriac Soup, topped with Plantbased Feta, Lemon & Sesame roasted Kale, homemade Ciabatta Croutons, drizzled with Sesame Oil
Makes approx. 6 portions
You will need:
Ingredients:
-1 Celeriac
1 large white Onion
-4-6 cloves of Garlic
-1/2 Lemon's Juice + zest
-2 tbsp of Nutritional Yeast
-Plantbased Milk/Cream - around 250ml
-Stock water (from boiling Celeriac)
-Sesame Oil
-Olive Oil
-Salt, Pepper
Topping's Options:
Croutons:
-Leftover Olive Ciabatta bread
-Lemon zest
-1/2 tsp of Dried Thyme
-Salt & Pepper
-Olive Oi

Crispy Kale:
- a handful of Kale (stalks included)
-1 tsp of Sesame Seeds
-Sesame Oil
Equipment:
-a large pan
-a medium size pan
-a chopping board
-a sharp knife
-a peeler
-2 baking trays
-a mixing spoon
-a slotted spoon
-a mixing bowl
- and hand blender/ food processor
Method:
-Start by preheating the oven to 180c gas mark 5/6
-Next, peel the Celeriac, chop into similar size pieces then place in the medium size pan with some salt, fill with water- place on the heat, pop on a lid and bring up to the boil approx. 20 minutes
-Place Garlic cloves on baking tray and place in the oven- roast for around 15-20 minutes
-Then peel and dice the Onion, add to large pan with a splash of Oil and fry on medium heat
-Meanwhile you can start prepping the croutons- chop the bread up into similar size cubes add into the mixing bowl with salt, Thyme, a few grates of Lemon zest and some Olive Oil- massage in
-Remove the Garlic from the oven- be careful when handling because it'll be HOT
-Place the croutons on the tray and bake for 15-20 minutes
-Pop the Garlic cloves out of their skins (carefully), chop and then add to the pan with Onion
-Wash and chop the Kale and add to the same mixing bowl you used previously- add in some Sesame oil, Salt and Sesame Seeds and place on another baking tray to bake from 15 minutes
-Check the Celeriac - once soft use the slotted spoon to decant into the other pan, add the Milk/Cream, Nutritional Yeast, Salt, Pepper, Lemon's Juice (add gradually), drizzle in some Sesame Oil (go slow with this too because it's a strong flavour) and add in some stock water and then start blending with hand blender/ or add to food processor - once smooth have a taste, add some more seasoning, Sesame Oil, Lemon juice and/or stock if needed.
-And Voila the soup is done!
-Now check on the Croutons and Kale- once the croutons appear golden brown remove from the oven, once the Kale appears crispy do the same and you're ready to serve.

Below is another Soup I made recently - I wanted to show off the banging toppings mostly, (another option for the above recipe). It was: crispy Cheezey Gnocchi ( pan-fried shop-bought Gnocchi, seasoned with Salt/Pepper and grated in some plantbased Parmesan near the end), toasted seeds, drizzled with homemade Dill Oil- SO GOOD.
