It's now officially Autumn which means its time to hibernate with a hot water bottle and eat yummy food. And nothing says comfort food like a casserole and a big pile of creamy mash. This has gotta be my best casserole recipe to date, rich, wholesome and delicious.
Plus, like majority of my recipes it's pretty cheap and easy to make- so it's an all round winner.
Serves 3-4
Ingredients:
Casserole:
1 Red Onion
4 Cloves of Garlic
1 Carrot
6 Veggie Sausages (I used Heck)
1 punnet of Mushrooms
1 tin of chopped Tomatoes
1 tbsp of Marmite/Yeast Extract
1 tbsp of Tomato Puree
2 tbsp of Nutritional Yeast
2 tsp of Flour
1 tsp of Allspice
1 tsp of Garlic Powder
1 tsp of Thyme
1 tsp of Rosemary
Red Wine
a handful of Kale
Salt & Pepper
I also added 1/2 a tin of Butter Beans that I had- you can add the whole tin to save any waste or keep the remain in the fridge for another recipe
Oil
Water
Mash:
3-4 Potatoes
(I saved the skins and roasted in the oven with some Salt, Pepper and Oil)
2 tbsp of Coconut Yogurt
2 tsp of Butter/Olive Oil
1/2 tsp of Garlic Powder
a splash of Milk
a hanful of vegan Smoked Applewood Cheese
2 tbsp of Nutrirional Yeast
Salt & Pepper
Equipment:
1 sharp knife
1 veg peeler
1 chopping board
1 large pan
1 small pan
1 wooden spoon
Method:
-Start be peeling the Red Onion, finely chopping and adding to the pan with a splash of oil/water and turn up to medium heat
-Peel the Garlic and Carrot and chop finely and add to the pan with a pinch of Salt- then add in the Marmite - give it all a good stir to coat the veg
-Next add in the herbs, spices, flour and Nutritional Yeast and squirt in the Tomato puree and mix it all into the veg
-Then add in a generous glug of Red Wine and turn down the heat a little
-Wash and roughly chop the Mushrooms and add the to the pan, with the Sausages and chopped Tomatoes and mix it all through (add some water to the empty can of tinned Tomatoes to get the remaining juice out- you can add this if the casserole gets too dry)
Now drain and add the Butter Beans
-Turn down the heat to low and let it simmer away for 20 minutes
-Have a taste and add some Salt and Pepper
-Around 10 minutes before serving peel and chop the Potatoes and put on to boil and then add all the additions to make a creamy dreamy mash
-Just before serving add a handful of washed and chopped greens to the casserole and then dish up and enjoy
