Really easy but DELICIOUS Mushroom Soup


Serving suggestion: Mushroom soup topped with a swirl of cream, thyme roasted potatoes, crumbled vegan feta, fresh parsley & a little truffle oil


A rich and delicious Mushroom soup.

Perfect hearty and filling meal for a chilly day under a blanket.

Gorgeous topped with roasted potatoes (see above), homemade croutons or a big wedge of bread with lots of creamy butter...YUM! And its such a simple recipe, which makes it even better!


(Recipe make around 3 portions)


You will need:


Ingredients:

2 white onions

4-6 cloves of garlic

6 Portobello mushrooms

1 tsp of marmite

100ml of water

1 small tin of coconut cream

1 carton of @alpro cream

Salt & pepper to taste

Oil to fry


Equipment:

1 chopping board

1 large pan

1 mixing spoon

1 knife

1 teaspoon

a garlic crusher

a hand blender/liquidiser


Method:


Start by peeling and dicing the onion and adding to pan with some oil, salt and fry on medium heat until soft


Wash and chop the mushrooms and add them next


Then peel the garlic and use a garlic crusher to mince the garlic- or alternatively finely chop- then add to the pan


Give it a good stir, then add the water and marmite and let it simmer away for 5 minutes or so


Next add the creams, some pepper and a little salt- taste before adding salt- then add to your taste


Let the soup simmer away for 10-15 minutes and then blend using a hand blender or pour into liquidiser!


Delicious drizzled with a little cream, or if you're feeling fancy some truffle oil.
