Peanut Butter & Oat Cookies



If you're a peanut butter lover like me- you will LOVE these cookies.

They're crumbly, melt in your mouth delicious! Perfect for an afternoon cuppa- although I wouldn't dunk them if I were you- unless you want to get floaters in your tea, haha.


(Recipe makes 6-8 cookies)


You will need:


Ingredients:


1/2 cup (112g) Butter/ Marg

1/2cup Brown Sugar (granulated/light brown)

1/2 cup (125g) Peanut Butter (Smooth or Crunchy depending which team you are)

3/4 cups (94g) All Purpose Flour

1 cup (96g) Jumbo Oats

1 tsp Baking Powder

1tsp Cinnamon

1/2 tsp Salt

1 tbsp Sesame Seeds (optional)


Equipment:


-1 medium pan

-1 baking tray

-1 mixing spoon

-1 small bowl

-1 sift

-baking parchment paper


Method:


-Start by preheating the oven to 180c (or equivalent)


-Melt the butter in a pan on low heat


-Once melted add the peanut butter and sugar and mix well


-In a bowl sift in the flour, baking powder, cinnamon, salt


-Then add in the oats and sesame seeds and mix well so it's all combined


-Pour the dry flour mix into the pan and mix in well


-Line a tray with baking parchment, then using clean hands and a spoon make 6-8 ball shapes (depending on how big you'd like the cookies) and place each one on the tray with space in between and lightly press down so they are flat


-Then bake in the oven for 15-18mins at 180c (fan)
