Cinnamon-Orange Crepes


Serving suggestion: Cinnamon-Orange Crepes, topped with Orange Marmalade, Coconut Yoghurt, Coconut Syrup, sprinkle of Cinnamon & Orange slice


This recipe was inspired by the wonderful Rachel Ama & something I saw Jamie create. I then came up with something similar & made these delicious crepes! It was the first attempt and they were actually SO good & really easy to make.

The marmalade was delectable.


Recipe makes around 6 crepes - I had to eat two- you know to try them out. So technically the batter serves 2!


Ingredients:


-150g Plain flour

-250ml Plantbased milk

-1tbsp Olive Oil

-2tbsp (approx 30ml) Orange juice

-5tbsp (approx. 70 ml) water

-1 tsp cinnamon


The topping is the main event, you will need:

-1 large Seville oranges

-1 tbsps of coconut/maple/golden syrup (more for drizzling)

-2-3 tbsp of coconut yoghurt (per person)

-Sprinkle of cinnamon


(times this by 2 if you’re actually making for 2 people)


Equipment:


-1 non stick pan (if possible)

-1 mixing bowl

-1 juicer

-1 sharp knife

-1 chopping board

-1 ladle

-1 spatula

-1 fork

-1 mixing spoon

-1 sift





Method:


-Sift the flour & cinnamon into a bowl, then add in the wet ingredients. Whisk well with the spoon until smooth & that’s your batter done !


-Slice the orange, juice/squeeze the juice into a pan (if you have a juicer that’s fab cuz you’ll get more out) & add your sweetner of choice, let it simmer away on low heat while you whip up the crepes


-Get your pan & wack it on medium heat, let it heat up for a minute & then ladle in some mixture. Use the ladle to very thinly spread the mix, then allow the crepe to cook. After a couple of minutes flip with a spatula to cook the other side


-Then complete process again (the first pancake always seems to be slightly dodge so don’t worry )


-Give the orange juice a little stir - it should be starting to look all caramelised & marmaladey- if not wack up the heat slightly until it’s bubbling


-I tend to pop all the pancakes back into the pan for a final heat before serving. Then start to plate up


-I rolled them up & then topped them with some more syrup, the marmalade, yoghurt & a sprinkle of cinnamon, but you could also spread the mix inside & roll them. Either way they’re gunna be delicious.
