
Serving suggestion: Portobello Mushrooms on Sourdough Toast, with Garlicky Sautéed Tender stem Broccoli, Greens and Seeds topped with Coriander and served with a Lemon wedge.
Mushrooms are a bit of a love them or hate them veg I feel...I for one bloomin love the things.
They're a delicious and high protein staple in my diet. I love adding them to Pasta dishes, using them as a base for a Mince for a Veggie Bolog, making a Stroganoff or simply on Toast for a tasty, nutritious brekky/brunch option. I also like mixing it up a bit and add some Greens, or like this recipe, with sautéed Broccoli too!
You will need:
2 Portobello Mushrooms (or a generous handful of whatever shrooms you prefer)
3 stalks of Broccoli
a handful of Greens
3 cloves of Garlic
1/2 a Lemon
1 tsp of Seeds (toast a little beforehand for optimum deliciousness)
1 tsp of Marmite (optional)
1 tsp of Oregano
Salt & Pepper
a glug of Oil
Method:
-It's super simple... peel and crush or finely chop the Garlic and add to a small pan with some
Oil and a pinch of Salt and sauté on low heat
-Add the Marmite now if you are opting to use it- and stir into the Oil
-Wash and chop the Broccoli (keeping the stalks) and add to the pan- stir and sauté for 10 minutes or so
-Wash and chop the Mushrooms (don't get rid of the stalks they're equally as delicious) and add to the pan with the Oregano, more Salt and Pepper- stir regularly and cook down for another 10 minutes- add some water if the pan gets too dry
-Pop your Bread in to toast
-Meanwhile wash and chop a handful of Greens and add to the pan, along with the Seeds and give it a stir
Add a squeeze of Lemon and then you're ready to serve!
-Drizzle the Toast with some Extra Virgin Olive Oil and a pinch of Salt and then top with the Mushrooms, Broccoli and Greens.
