Aren't Peas smashing! Quintessentially British and delicious. Here's a really, really simple, delicious and high protein Avocado alternative.
In my opinion, we've become very reliant on Avocados as a breakfast option and there are SO many other, equally as yummy alternatives that can be tried and experimented with. Leave those Avos alone and lets get creative!
You will need:
1 cup of frozen peas (approx.)
2 cloves of garlic (peeled & crushed)
1-2 tbsp of Coconut Yoghurt
1/2 a Lemon’s juice
1/2 tsp of Cumin
1/2 tsp of Turmeric
1/2 tsp of Chilli Flakes
Salt and Pepper to taste
Firstly, boil the kettle and leave the Peas in a bowl of boiling water to defrost while you get the other ingredient sorted.
Once the Peas are soft drain the water and place in a food processor/blender with the other ingredients, start with 1 spoon of Yoghurt to begin with as you can always add more!
Then blitz for 5 seconds, give it a stir with a spoon and blitz again.
You can blend until smooth or keep some texture.
Have a taste add some Salt, Pepper and the other half of the Lemon if you like it more zesty!
There you have it, it's that simple.
It’s perfect spread on toast with some poached Eggs or make it Vegan and add some Garlickly Mushrooms and greens.... yum!
