Pea fritters


Serving suggestion: topped with homemade mango cream & sprouts

I love peas! I think they're so underrated. They're so cheap, versatile, super delicious and high in protein!

These little patties are great with summer meze's bowls or snacking with some hummus! The spices can be changed accordingly to your preference !

Makes 4-6 depending on size

You will need:

200g of frozen peas

50g of flour (I used buckwheat)

2 tbsp. of nutritional yeast

1 tbsp. of tahini

1 lime (juice)

1 tsp of turmeric

1 tsp of garlic powder

1 tsp of cumin

1/2 a tsp of cayenne pepper

salt & pepper

oil for frying

* you could use lemon & fresh or mixed herbs if you wanted the fritters to suit a Mediterranean-style meze*

Equipment:

1 small bowl

1 medium size bowl

1 spoon

1 sharp knife

1 chopping board

1 small frying pan

1 blender or you can use a potato masher

1 spatular

Method:

-Defrost your peas - I just covered mine in warm water for a few minutes

-Add all your dry ingredients into your small bowl

-Drain your peas and add them, your tahini & lime juice to blender and blitz for a few seconds- you want a mixture of smooth and chunky

-Decant mix into medium size bowl then add in your dry ingredients, mixing until a thick mixture starts to form

Warm some oil on medium heat in your frying pan and then spoon in your mix carefully

Fry for 5 minutes then flip and fry on the other side for the same!

Serving suggestion: Indian meze bowl consisting of my root veg curry, aubergine dhal,

wild rice, sauted cabbed, radishes, mango cream, roasted chickepas & coriander
