
I love banana bread! Its one of those much loved recipes right? I make and eat it so much!
I came up with the idea of adding some sweet spices in to the mix and it worked so well with the banana that I wanted to share this recipes with you guys ! They’re delicious served warm/toasted with some butter and a sprinkle of cinnamon OR you can pop a couple in a Tupperware for an on the go breaky or snack!
There's also only a little bit of added sweetness so feel free to add sugar if ya wish!
Makes 9 approx.
You will need:
Ingredients:
3 medium ripe bananas
5 tbsp of oil - approx 75ml
2tbsp maple syrup
1 chia egg ( 1tbsp of chia seeds mixed with 2 tbsp of warm water)
150g oat flour (ground oats) - you can use whatever flour you prefer
100g buckwheat flour
2 tsp of baking power
1 tsp of turmeric
2 tsp of cinnamon
1/2 tsp nutmeg
A generous handful of raisin/sultanas - optional
2 tbsp water if it need loosening
Equipment:
1 large mixing bowl
1 medium bowl
1 ramekin
1 muffin tray
1 fork
Method:
-Preheat your oven to 180c of equivalent
-Add you chia seeds to the ramekin with some warm water and put to the side
Put all you dry ingredients in your medium bowl and put to one side
-Peel and smash your bananas in the large mixing bowl with maple syrup and oil
Check on your chia egg, it should have formed a kinda gloopy consistency now (yum!), add this to your banana mix
Gradually start adding in you dry ingredients, mixing well
Add in your raisins/sultanas if your using them with some water if the mix needs loosening
Oil each dip in your muffin tray and then spoon in your mixture equally
Bake for around 20-25 minutes
