Smokey sausage casserole

Serving suggestion: serve with brown rice & top with parsley

I don't know about you, but I LOVE smokey and bbq flavours! Cant get enough of them! So I came up with this really simple wholesome and delicious smokey sausage casserole! Perfect with rice, potato, bread, salad or all four !

This recipe feeds 4-6 depending on portion size so feed your friends/family or put it into container to refrigerate/freeze for another day!

You will need:


1 Butternut Squash

1 Red Pepper

1 White Onion

6 Cloves of Garlic

4 veggie sausages (Linda McCartney Chorizo-style work really nicely)

1 tin of Cannellini Beans

2 tin of Tomatoes

a bunch of fresh Parsley/Coriander (approx. 30g)

a generous handful of Spinach

2 tsp of Cayenne Pepper

2 tsp of Smoked Paprika

1/2 tsp of Cumin

1 tsp of dried Coriander

Salt and Pepper (to taste)

1 Lime (juice)



2 roasting tray

1 large pan/wok

1 garlic crusher

1 chopping board

1 sharp knife

1 colander


Preheat oven to 180c of equivalent- place 1 roasting tray into oven with some oil to heat

Peel, deseed and chop the squash into similar sized cubes then place into heated roasting tray, sprinkle with salt and roast for 20-25 minutes

Meanwhile add your sausages to the second tray and cook for 15 minutes

Peel, dice and fry your onion in some water until soft on medium heat

Then add your garlic (peeled and crushed) and red pepper (deseeded and chopped into chunks) and sauté for 5-10 minutes

Add your spices to the pan with a little bit of water to coat the veg

After 15 minutes is up remove sausages from the oven, chop into pieces and add into pan with tinned tomatoes, drained cannellini beans and season with salt and pepper to taste

Meanwhile check on your squash in the oven and add to pan if its looking all delicious and roasty- mix in well well

Wash and chop your spinach and fresh parsley/coriander and add to the pan with the juice of 1 lime

Let it all cook down for 5-10 minutes and serve when you wish with side of your choice!
