This is without a doubt the best pancake recipe I have come up with so far! Vegan, gluten and refined sugar free and absolutely delicious! Can you believe it? They're also high in protein, fibre and immune boosting!
You will need:
2 Bananas
50g of Buckwheat flour
50g of oats
2 tbsp of flax milled seeds
2 tbsp of yoghurt (I used koko coconut yoghurt)
5 tbsp of water
5 tbsp of mylk ( I used Almond)
1 tpsn of cinnamon
1/2 tpsn of baking powder
coconut oil for frying
Optional:
1 tspn of baobab
1 tspn of psyllium husk
1 tspn of nutritional yeast
Topping:
toasted coconut
more coconut yoghurt
homemade cashew butter
melted dark chocolate drops with coconut sugar ( I get mine from www.realfoodsource.com )
Equipment:
1 large mixing bowl
1 fork
1 spoon
1 frying pan
1 spatula
Method:
In the bowl smash the bananas with fork
Then mix in the dry ingredients ensuring it is all combined
Then gradually add the myk and water until its is mixed in and formed a liquid
Put frying pan on a medium heat and add a tspn of coconut oil, wait until melted
Once melted, spoon in some of the mixture
Shape the mix into a rough circle and leave for a couple minutes
After a couple of minutes use the spatula to flip the pancake leave for a couple more minutes
Once golden brown (texture like sun), decant onto a plate
Then do the same with the second and third
I've suggested some pancake toppings but you can also add warm fruit or keep it simple with a drizzle of honey/agave :)
