I love topped toast for breakfast! Its quick, effortless and nutritious! Lathering PB, banana and cinnamon, yoghurt and warm berries or good old smashed avocado with lime! I know this combo sounds a little odd, but hear me out, you can use sweet potato for a lot of sweet recipes!
This recipe simply came about because I had a little leftover sweet potato mash from my dinner the night before!
I mixed 2 tspn of coconut yoghurt, 1 tspn peanut butter and 1/2 tspn of cinnamon together with the cooked sweet potato ready to lather on to wholemeal toast. Then I added banana coins, warmed berries and granola to create this wonderful toast topping triumph! Honestly it was super dooper yummy and worth a try!
P.S... the cheapest and healthiest (not packed with sugar) granola I have found on the highstreet is in M & S! A modest £2.50 for a bag it is called '3 seeds granola'.. or something along those lines!
