
These cookies are super easy to make a last 3-4 days in an air-tight tup-a-wear. I usually make them on a Sunday and a Wednesday eve ready to take to work to munch on throughout the day!
You will need:
The basic cookie:
3 ripe Bananas
1 tbsp of Agave/Honey/Maple syrup
1 cup of oats (add gradually,quantity depends on size of bananas)
1 tbsp of coconut oil (melted)
1 tspn of cinnamon
pinch of sea salt
2 tbsp of peanut butter
you could add..
1 tspn of chia seeds
a handful of frozen berries or raisins
or
1 tbsp of cocoa
1 tbsp of cocoa nibs
3 squares of 70-100% dark chocolate
or
My favourite...
1/2 a cup of ground cashews
1/2 a cup of ground/desiccated coconut
which makes them taste like macaroons
(a good place to buy cheap, bulk wholefoods is Real Food Source)
Equipment:
1 mixing bowl
1 fox
1 flat baking tray
1 piece of greaseproof paper to line the tray
1 spoon
Method:
Preheat oven to 180c
Peel and smash the bananas in the mixing bowl then add all of the ingredients and combine well using a spoon
Line the tray and then form cookie shapes using a spoon and place evening on the tray
Bake in the oven for 10-15 minutes and there you have it!
