Vegan Breakfast Flapjacks

 It's pretty difficult to fit in a substantial breakfast in the morning as well as making sure I look half decent (ha). So I decided that it would be a good idea to rustle up something tasty the night before that will last a couple of days and don't take hours to make. These flapjacks are so simple and are perfect to grab on the way to your lecture or to warm up and top with some yoghurt and cinnamon for a after dinner snack. I took some inspiration from my sister (who made them for me a couple of months ago) and created my own breakfast flapjack. 

 

This recipe makes approx. 4-6 flapjacks depending how big you slice them.

 

You will need:

2 ripe Bananas

2-3 cups of Oats

3 tbsp of Alpro Yoghurt

2 tbsp of Crunchy Peanut Butter

1 small handful of frozen or fresh Raspberries

1 small handful of seeds

1 small handful of nuts

1 tpsn of Coconut Sugar (or brown sugar)

 

Equipment:

1 mixing bowl

1 fork

1 baking dish/tray

1 spoon

1 knife

 

Method:

Preheat oven to 180c, Gas Mark 5

Peel and smash the Bananas in the bowl

Then add in the Oats, Peanut Butter and Yoghurt and combine well

Sprinkle in the seeds, nuts and Raspberries and mix in 

(Add more Oats or Yoghurt if too wet/dry)

Then add the mix to the baking dish and spread evenly

Sprinkle with Sugar and bake for around 10-15 minutes

When golden, remove from oven, leave to cool and then slice into portions and put into a tupperwear in the fridge.
