
'Souper' simple warming and delicious Carrot, Turmeric & Coconut soup that you can knock up in 20 minutes!
You will need:
500g of Carrots
1 clove of Garlic
1/2 a Onion
1 veggie Stock Cube
1.5 tspn of Turmeric
1/2 tppn of Cumin
Salt and Pepper
1/2 a tin of Coconut Milk
A handful of Coriander or drizzle of Balsamic Vinegar
Equipment:
1 medium pan
1 blender
1 mixing spoon
1 sharp knife
1 chopping board
1 ladle
Method:
Peel and dice Garlic and Onion and add to pan with a splash of Oil and sauté on medium heat until soften
Meanwhile wash and cube Carrots (skin on) and add them to pan and cover with boiling water
Crumble in the Stock Cube, spices and season with Salt and Pepper and boil for around 15 minutes
Remove from heat and add Carrots to blender with 4 ladles of soup stock water and the Coconut Milk, blend and serve with a sprinkle of zesty Coriander or a drizzle of Balsamic Vinegar.
