Sticky Soy Cauliflower Noodles

So I think Cauliflower has a really bad reputation. Overcooked, tasteless and bland veggie that's plonked on your plate with ya roast din dins or completely smothered in cheese sauce to make it taste nice, am I right? Well, Cauliflower is actually a super delicious and nutritious veggie when its cooked right aaaaand you can stir-fry the leaves into Asian greens so no waste! This recipe is crazily easy and its just sooo yummy, sticky, sweet and spicy what more could you ask for?

 

You will need:

 

For the Cauliflower:

1/2 a Cauliflower globe (keep the greens)

2 clove of Garlic

1/2 to 1 Chilli (depending how much heat you like) 

2cm piece of Ginger

1  tbsp of Honey/Maple Syrup 

2 tbsp of Dark Soy Sauce/ Liquid or Coconut Aminos

1 tbsp of Olive oil

1 tbsp of Water

Salt & Pepper to taste

 

For the Greens:

All of the greens taken from the globe

1 small clove of Garlic

a tad more Chilli

1 tspn of Sesame Seeds

Water

 

 

The noodles where just Asian noodles mixed with a little Lemon Juice & I topped with some toasted Cashews

 

Equipment:

1 pan

1 sharp knife

1 chopping board

1 roasting tray

1 sift (drain the noodles)

1 flat roasting tray (roast the cashews)

 

 

Method:

Preheat the oven to Gas mark 5 around 180c

Peel and chop the Ginger, Garlic and Chilli add to a small pan with a  little water and sauté for a couple of minutes on  low heat

Then add the Soy Sauce, the sweetener, oil, salt, pepper and some more water

Take the Cauliflower, remove the greens and put to one side

Then take the globe slice down the centre and then into roughly chopped chunks and place in roasting tray

Pour the marinade over the Cauliflower to cover completely and place in the oven to roast for around 15-20 minutes until the marinade looks golden and caramelised

5 minutes before serving  cook the noodles, place the Cashews in the oven to toast and prepare the greens:

Remove the hard, coarse bits from the Cauliflower greens so that you are left with the leaves and soft stalk

Roughly chop the greens and add to the pan with a small clove of Garlic and a little more Chilli and more water to sauté

Before serving add some sesame seeds to the greens, combine noodles with some fresh Lemon Juice and top with toasted Cashews!
