
I la la love noodles! They are so simple and you can pretty much add any veggies to them, so they're perfect for a student budget! I like to use Ginger, Garlic and Chilli as they are so fresh and fiery and work well as a base for most Asian dishes. The flavours really compliment each other and you don't really need to add much else! I've never had Butternut Squash with Noodles before but it worked really well roasted and sprinkled with Sesame Seeds.
Serves 1
You will need:
1/3 of a Chilli
3 cloves of Garlic
1/2 a thumb sized piece of Ginger
2 tspn of Soy Sauce/ Liquid or Coconut Aminos
1/2 a Lemon (Juice)
100ml of Water
1/4 of a block of Tofu (I used Cauldron's Marinated Tofu)
a handful of chopped Butternut Squash (approx. 1/4)
1 tspn of Sesame Seeds
1 tbsn of Cashew Nuts
1 Noodle nest
2 tbsp. of Sesame/ Coconut oil
a handful of fresh Coriander (optional)
Equipment:
1 roasting tray
1 flat roasting tray
1 frying pan
1 medium pan
1 sharp knife
1 chopping board
1 peeler (for Ginger)
Method:
Preheat the oven to 180c Gas Mark 5 with
Add a drizzle of oil to baking tray and place in the oven to preheat
Peel and deseed your squash (scooping out the insides) then chop into small chunks
Remove roasting tray from oven and add Squash, coat in oil and place in over and cook for around 20 minutes until golden and crispy
Meanwhile peel and grate Ginger and Garlic and chop and deseed the Chilli and add to frying plan with a splash of oil and sauté for a few minutes on low/med heat
Then add 2 tspn of Soy Sauce/alternative and gradually add the water when the pan gets too dry
Open the oven to check the Squash, give the tray a shake & add a sprinkle of Sesame Seeds
Chop your Tofu add to the frying pan, turn up to medium heat and stir every 30 seconds- fry for around 10 minutes making sure all sides of the tofu is cooked
Boil the kettle then add Noodles to a pan with the boiling Water
Meanwhile take the Cashews, break in half and place on flat roasting tray add to the oven and toast for 5 minutes
Remove Squash and Cashews from oven when cooked
Drain noodles and add half a Lemon's juice to the noodles then mix in the Tofu and a pinch of salt
Add some Water to the frying pan to deglaze and pour into the Noodles
Top the Noodles with Squash, toasted Cashews
Annnd there you have it, a very simple and delicious Noodle recipe !
