Easy-peasy Baked Beans


You will need:

1 tin chopped or plum tomatoes

1 tin of drained cannellini or butter beans

3 clove of garlic (crushed)

1/4 of a red onion

1/2 tspn of cayenne pepper

1/2 tspn of cumin

1 tspn of smoked paprika

1 heaped tbsp. of nutritional yeast

1 tsp of marmite/yeast extract

1 Salt & Pepper (for seasoning)

Equipment:

1 blender

1 sharp knife

1 chopping board

1 pan

1 can opener

Method:

Blend the tomatoes for a couple of seconds - optional to make a thicker sauce

Chop and fry the garlic and red onion with a little oil at medium heat until softened

Add the spices and stir well, ensuring not to burn them (add a splash of water if needs be)

Add the blended tomatoes and mix well

Finally add the beans and cook for 4-5 minutes, stirring regularly, season generously with salt & pepper and serve! (I served mine with baked Chestnut Mushrooms and Rye Bread)
