I don't know about you, but I LOVE smokey and bbq flavours! Cant get enough of them! So I came up with this really simple wholesome and delicious smokey sausage casserole! Perfect with rice, potato, bread, salad or all four !

I love this recipe because its really creamy as well as being packed with protein and flavour! I love a curry!

I generally tend to stick to coconut based curries but this one is really yummy so worth the change. The aubergine and potato work so well together and combined with the spiced tomato sauce, its just a taste sensation, haha. So anyway, I thought I would share it with you guys!
